Broadly speaking, the length of the blade determines the size of the task it is best suited for. The larger the blade, the larger the food it can cut through; the smaller the blade, the more manageable it will be when handling smaller tasks. Blade width affects the maneuverability of a knife. A thin blade will more easily follow contours in food when peeling, skinning, or working around bones. Alternatively, a wide blade will provide clean vertical chops when dicing meat and veggies.
If you’re not sure what you’re looking for, or are just looking to get one good knife, an 8” chef’s knife is always a solid choice. It’s big enough to handle almost any job in the home kitchen, and will make short work of the many dicing, chopping, and slicing tasks in food prep. If an 8” Chef’s Knife seems a little daunting, then try a 6” Chef’s Knife.
