The Nakiri is an awesome Japanese-style general-purpose kitchen knife similar to a Santoku knife. The blade of the Nakiri is heavier and thicker than the Santoku, resulting in a standard chopping motion versus a rocking motion. It performs extremely well at slicing, dicing, and mincing. Additionally, the blade tip is not sharp, making it safer to use than many other kitchen knife styles.
A Kullenschliff (K) edge, also known as a Granton or Hollow-Edge, is designed to create an air pocket between the food and the blade, helping to prevent sticking. This dynamic design is featured on both the Lamson Nakiri and our Santoku.
Origin of the Nakiri Knife
- A Nakiri knife, when translated, literally means “vegetable chopper.” “Na” means “vegetable” and “Kiri” means chopper.
- The Nakiri knife is also very close to an Usuba knife which is also used as a vegetable slicer. However, unlike the Usuba, the Nakiri is double beveled. The Nakiri is, therefore, more popular for vegetable consumers, especially in Europe and the Americas
- Both the Nakiri and Usuba knives originated in centuries-old Japan when the predominant diet consisted of seafood, rice, and vegetables. Japanese people continue to eat more fish than Europeans or Americans, so the Nakiri knife remains one of the most popular knives in Japan.
Use of a Nakiri Knife
- The Nakiri knife has a deep belly on the knife with a predominantly straight edge crafted for chopping rather than rocking. The side on the knife looks a bit like a meat cleaver however the Nakiri is lighter and has a slimmer blade, allowing it to cut through onions, tomatoes, carrots, and other vegetables quicker and safer.
- The main difference when using a Nakiri knife as opposed to a Chef’s knife or even a Santoku is that the Nakiri is built for chopping with an up and down motion.
Constructed from superior USA Hi-Carbon Stainless Steel, our full-tang Vintage blades are cut, ground, polished and sharpened in our Massachusetts facilities. Handle scales of Walnut or Midnight (Black G-10) are assembled to the blades with brass or nickel-silver rivets and then the knives are meticulously finished and sharpened.
The Vintage Series features updated ergonomically friendly hand-finished Walnut or Midnight (Black G-10) handles that have a traditional, timeless look and feel. The sleek integrated bolster allows for a traditional or pinch-grip. The brass rivets complement the Walnut handle, while the nickel-silver rivets complement the Midnight handle and accents the stainless-steel blade.

- Hone blade edges regularly with a Lamson 10″ Sharpening (Honing Steel) (39800) a Lamson 12” Leather Strop (52821) or Lamson’s Combination Dual Arkansas Bench Stone 56878)
- Really tune up your blade with Lamson’s Adjustable Handheld Sharpener (56880)
- If your Lamson blade edge remains dull even after honing or using a sharpener, please have the blade professionally sharpened or send it back to Lamson for Free Sharpening with our Sharp-For-Life program
- Hand-wash all Knives and Tools with warm soapy water
- Dry immediately with a soft, clean cloth
- The dishwasher is NEVER recommended
- Periodically apply Lamson’s TreeSpirit Mineral Oil (05097/05099) to handles to prevent drying out
- Get a SET of Beekeeper’s Gold Beeswax and 8 oz. Mineral Oil (05072) to protect BOTH your knife and sheath

My wife's favorite knife
This is the perfect size nakiri knife to prepare small vegetables. It is so comfortable to handle.
I have bought about a dozen different knives from Lamson over the last 20 years. This particular knife is the BOMB. Smaller handle than my regular chef knife. Easy to handle for smaller hands. I recommend this knife for your wife and/or girlfriend. You will be eating better.

Turns out I've never used a sharp kitchen knife. I have now. I like it. I'm no gourmet but it does what it's supposed to. I'd love some kind sheath for it.
