    The knife is awesome, no reason to give it any less than 5 stars.

    I need to remember that even when I purchase expensive knives, I still need to wet stone the blade to my specific angles. I always forget that.

    But it’s a great addition. I’ve never used a big cleaver style knife before, so I’m still getting used to it. But honestly I think I like the height a little more than a santoku. It’s just a slower chop. 8in chefs knives and 6in santokus really have more speed. With the cleaver style, it’s just a little slower and much more verticle cuts, instead rocking and drawing.

    But great knife for sure.

    No issues if you know how to use it.

    I’ve had this knife for almost 2 years, it is not my favorite knife but is definitely in my top 3.

    What I love about this knife: it has a great feel in the hand, I love using the extra weight of the blade for sort of rough tasks like smashing garlic cloves and dicing/mincing herbs, veggies etc. If I’m doing something that I think is too tough for my Miyabi chef’s knife, this is probably my go to.

    My only complaint about this knife: the bevel angle from the factory was steep. Even though the knife was sharp, the abrupt angle of this bezel made it feel clumsy. Slicing through something simple like an onion was hard to do straight and took more force than it should have. I hand-sharpen my knives and was able to rework the primary bezel, and now the knife is really nice to use.

    Overall I really enjoy using this knife, just had to work it a little bit to get it where I like.

    I’ve been using this knife for about 8 months and I love it. I find this knife best for cutting meat, raw or cooked. It slices baby back ribs like butter (and perfectly straight), pork shoulder into chunks for chili Verde, carving chicken and turkey (better than my boning knife). When I’m carving chicken, I like that the wooden handle still keeps it’s good grip even when my hands are greasy. I’m short with small hands, but this knife gives me some extra leverage when cutting. When I clean it, I lay it flat in an empty sink and carefully wash the blade with a soapy washcloth.
