I had been thinking about this for a while, and decided to go for it. It is perfect for hard squashes, which I struggled with just using a chef’s knife. This cleaver made quick work of an acorn squash, which makes me more likely to prepare them more often.

I found it to be extremely helpful when prepping veggies for a large batch of stew and when slicing supper thin onion for big bowl of salad. The extra width of blade and offset of edge to handle makes repetitive slicing much more convenient than a standard French Chef’s knife. The only down side was that it arrived a little less sharp than the other Lamson knives I have purchased..

I really like this knife. It looks beautiful and cuts perfectly. I was slightly concerned about the weight, but it’s a non issue. I’m not cutting vegetables all day. The knife arrived with a sharp edge, but the sharpened edge has flat low spots toward the heel of the blade. Looks like uneven pressure while using the belt sander during sharpening process. Compared to my Lamson Santoku, my chinese vegetable cleaver is nothing to be proud of.
