Ingredients

Instructions

  • 1

Prepare the wings: Using a Lamson Nakiri Knife, separate the drum from the flat portion of the chicken wings. Pat the wings dry and place them in a bowl. Season with salt, pepper, garlic powder, and onion powder to taste.

  • 2

Fry the wings: Heat a fryer or Dutch oven with high heat oil to 350°F (175°C). Fry the seasoned wings in batches for approximately 5-7 minutes until crispy. Remove from the oil and immediately sprinkle with salt. Set aside.

  • 3

Make the blue cheese dressing: In a blender, combine organic blue cheese, sour cream, mayonnaise, a splash of milk, garlic cloves, and fresh lemon juice. Pulse until well blended. Add additional crumbles of blue cheese for added flavor.

  • 4

Prepare the sauce: In a saucepan, heat a mixture of Frank’s RedHot sauce, Hank Sauce hot sauce, and butter until the butter is fully melted. Toss the cooked wings in the sauce until well coated.

  • 5

Serve and garnish: Plate the sauced wings and accompany them with the blue cheese dressing, fresh celery, and carrots. Garnish with fresh chives for an extra touch of flavor.
