The seventh day of the Lunar New Year, also known as Renri or “Everybody’s Birthday,” holds special significance in Chinese culture. According to traditional beliefs, this day marks the creation of human beings, making it a day of celebration and reflection on the origins of humanity.

One of the most notable customs associated with the seventh day of the Lunar New Year is the practice of eating a dish called “seven vegetable soup” or “seven-vegetable congee.” This dish typically contains seven types of vegetables, symbolizing harmony, prosperity, and longevity. Each vegetable carries its own auspicious meaning, such as wealth, health, and happiness, adding layers of symbolism to the meal.

    Start by preparing your vegetables. Use the Chinese vegetable cleaver to thinly slice the carrot, dice the potato, slice the mushrooms, chop the bok choy or napa cabbage, slice the bamboo shoots, snow peas, and water chestnuts. Set aside.

    In a large pot, heat a little oil over medium heat. Add the minced garlic and sauté for a minute until fragrant.

    Add the sliced carrot and potato to the pot and sauté for another 2-3 minutes until slightly softened.

    Pour in the vegetable or chicken broth and bring to a simmer. Let it cook for about 10 minutes until the vegetables are tender.

    Add the sliced mushrooms, bok choy or napa cabbage, bamboo shoots, snow peas, water chestnuts, and tofu (if using) to the pot. Let it simmer for another 5-7 minutes until all the vegetables are cooked through.

    Season the soup with soy sauce, salt, and pepper to taste. Adjust the seasoning as needed.

    Serve the soup hot, garnished with chopped green onions for added flavor and freshness.
