It’s too ding dang hot to turn that oven on to bake a whole pie!
Here we have a short baked icebox pie! Its short assembly time and long chill time means you’ll be able to make it and then spend all day at the pool swimming or mingling at the backyard barbecue, and just as things are winding down, the pie will be ready to slice and serve!
You can share the cold treat or save it all for yourself!
Eating this pie will give you similar feelings to listening to Summer Breeze by Seals and Croft!
Make extra strawberry puree to use in cocktails or eat over yogurt!

Make the Crust!
In a medium mixing bowl, mix cookie crumbs and melted butter together. The mixture should be thick and have the texture of wet sand, breaking up any large cookie chunks.
Pour the mixture into an ungreased pie pan, using your hand and the help of a ¼ measuring cup pat the crumbs down the bottom and up the sides. Making the crumbs compact. Do not pack down with heavy force, take your time on this step slowly building the walls of your pie crust. - 2
Bake the Crust!
Preheat your oven to 350 degrees. On the center rack on a baking sheet, bake cookie crust for 10 mins. Cool crust completely before filling, 30 minutes- 1 hour of cooling.

Make the Strawberry Sauce!
In a small saucepan over medium low heat, place strawberries and sugar. Cook over medium low heat till strawberries soften and the liquid has reduced in half. While the strawberries cook mash them gently with the back of a spoon or a small masher, till a puree forms, roughly 15 minutes, longer if frozen strawberries are used. - 4
Assemble the Pie!
In a large mixing bowl, unearth softened ice cream! To the ice cream do your best Cold Stone Creamery impression and stir in crushed up oreo cookies and swirl in ¾ of the strawberry puree mixture. Fold all the ingredients in till evenly incorporated.
Take cooled cookie crust and fill with ice cream mixture. Freeze for at least 4 hours.Once frozen and ready to eat, top with whipped cream, additional cookies and drizzle with strawberry puree!

Slice and serve, while keeping cool in the summer heat!
