Zesty Citrus-Spiced Grilled Mahi with Asparagus Recipe

The winter menu is typically filled with hot dishes to keep you warm, but we invite you to defy the season’s chill and enjoy this dish that brings the warmth of the tropics to your plate. Turn up the grill and be transported to sun-kissed shores even on the coldest of days

    Preheat the grill to medium-high heat.

    In a mixing bowl, combine olive oil, ground cumin, smoked paprika, ground coriander, salt, and pepper. Mix the spices well to create a vibrant marinade.

    Zest the lemon and orange into the bowl, capturing the citrusy essence for a burst of freshness in the marinade.

    Squeeze the juice from the lemon and orange into the bowl. The combination of zest and juice will infuse the marinade with a zesty citrus flavor.

    Add minced garlic to the marinade, providing a savory depth to complement the citrus and spices.

    Place the fish fillets into the bowl, ensuring each fillet is thoroughly coated with the citrus-spice marinade. Let the fish marinate for at least 15-20 minutes, allowing the flavors to meld.

    While the fish is marinating, prepare the asparagus. Trim the ends and toss them in a bit of olive oil, salt, and pepper.

    Using the Fish & Asparagus Turner, place the marinated fish fillets and asparagus directly on the preheated grill. Grill for approximately 4-5 minutes per side for the fish and until the asparagus is tender-crisp.

    During grilling, use the Fish & Asparagus Turner to carefully flip the fillets and asparagus, ensuring even cooking.

    Baste the fish with any remaining marinade for enhanced flavor. Once everything is cooked to perfection, transfer the fish and asparagus to a serving platter.

    Garnish with fresh cilantro or parsley for a touch of elegance and freshness.

Serve with a side of rice or quinoa. 

If you want to enhance the dish with a glass of wine, we suggest a Sauvignon-Blanc, specifically one from the Australian or New Zealand region. These wines are light and refreshing. It boasts flavors of lemon and tropical fruits that will not overpower the dish and its spices but complement it.
